Chicken Marengo

 

1 pkg. (1-1/2 oz.) spaghetti sauce mix

1/2 cup bread crumbs

3 lb. chicken pieces

1/4 cup salad oil

1/2 cup sauterne

1 can (1 lb.) stewed tomatoes, including liquid

1 can (8 oz.) sliced mushrooms, drained

Combine spaghetti sauce mix and crumbs; coat chicken. Reserve remaining crumb mixture. In a skillet, heat oil; brown chicken on both sides. Add sauterne, tomatoes, including liquid, mushrooms, and remaining crumb mixture. Cover and simmer for 1 hour or until chicken is tender. Makes 6 servings.
