Tri-Colored Mochi

 

Mix:

1 (1 lb.) box mochiko

2 c. sugar

1 tsp. baking powder

Gradually add:

2 c. water

1 can coconut milk

1 tsp. vanilla

Divide into 3 parts (2 cup portions):

  1. Green (add 12 drops of food coloring)

  2. Leave white

  3. Red (add 12 drops of food coloring).

Heat oven to 350 F. Spray 9x13 inch pan with Pam. Place green colored portion into pan. Cover with foil. Bake for 15 minutes. Remove foil and add white portion. Cover and bake 20 minutes. Remove foil and add red colored portion. Cover and bake 30 minutes. Remove foil after baking and let cool thoroughly. Cut with plastic knife and roll in potato starch or kinako.
