YELLOW CAKE

1 cup shortening

3 tsp. baking powder (double action)

2 cups sugar

4 eggs (or 2 egg yolks and 3 whole eggs)

1/2 tsp. salt

3 cups sifted Flour

3/4 cup milk

1 tsp. lemon extract

1 tsp. vanilla

Cream shortening and sugar; add eggs one at a time and beat well. Stir flour, baking powder and salt together and add to creamed mixture alternately with milk and flavoring. Bake in 2 8-inch square pans or 2 9-inch round pans for 35 to 40 minutes or until done.
