PLAIN PANCAKE
Heat griddle slowly while mixing batter.
Beat well 1 egg
Beat in 1-1/4 cups buttermilk or sour milk
1 tsp. sugar
1 tsp. baking powder
2 tsp. soft shortening
1/2 tsp. soda
1-1/4 cups sifted flour
1/2 tsp. salt
Beat with rotary beater until smooth.
Pour batter from tip of large spoon (one pouring) or from pitcher, in pools a little apart (for perfectly round cakes). If it is necessary, grease griddle very lightly. Turn pancakes as soon as they are puffed and full of bubbles.
