Chow Mein

Boil 1 pkg. chuuka soba in boiling water until soft but not overcooked. Drain and rinse with cold tap water. Spread noodle in cake pan and let it try for 2 hours. Bring 2 - 3 Tbsp. peanut oil to smoking point and let it cool. Pour over noodles and sprinkle with 1/2 tsp. salt. Bake in 375 degree F. for 10 - 15 minutes or until golden brown. For crispier noodles, noodles can be fried in deep fat after it has dried. Noodles can be refrigerated or stored in the freezer. Saimin noodles may also be used.
