Island Style Baked Opakapaka
2 lb. Opakapaka
2 green onions
1 tablespoon grated ginger root
2 tablespoons butter or margarine, cut into small pieces
1/4 cup soy sauce
Preheat electric oven to 400 F. Place fish in a shallow baking dish. Mince tops of onions. Put white portion, half of the ginger, and half of the butter into cavity of fish. Sprinkle remaining ginger, minced onions, and the soy sauce over fish. Put remaining butter pieces on fish; cover and bake for 30 minutes. Makes 4 servings.
