Eggplant with Harm Ha

 

1/4 lb. pork

1 lb. eggplant

1 slice ginger

1 clove garlic, smashed

1 stalk green onion

2 Tbsp. harm ha*

1/2 tsp. sugar

1 tsp. shoyu

Cooking oil

1 cup water

Slice pork thin (or use pork hash). Cut eggplant into 1/2-inch pieces. Crush ginger and garlic. Cut onion 1/2 inch long. Mix together harm ha, sugar, and shoyu. Heat pan with oil. Brown ginger and garlic. Add pork and fry for 2 minutes. Add harm ha mixture and saute a few minutes. Add eggplant and stir for 2 minutes. Add water; cook until done. Add green onion.
