Tofu Tempura With Shrimp
(Deep Fried Bean Curd) (Japanese)
1 tofu (squeeze out excess water)
1/4 cup shrimp flakes, or 3 fresh frozen shrimps, boiled and chopped
1/2 cup raw carrots, chopped fine
1/3 cup string beans, cut in slivers
1/4 cup sesame seeds (pan broiled)
1/3 cup gobo, sliced and chopped
1-1/2 tsp. salt (if fresh shrimps are used)
1/2 tsp. ajinomoto
3 eggs
Grind sesame seeds in suribachi. Add shrimp flakes, then tofu and continue grinding. Put in carrots, beans, gobo, eggs, and mix thoroughly. Add sugar and salt and ajinomoto. Drop by spoonful in deep fat. When brown, draining on paper towels.
