Refrigerator Bran Muffins

 

2 c. All Bran (cereal)

2 c. oatmeal

2 c. Grape Nuts

3 c. brown sugar

2 tsp. salt

1 c. margarine

2 c. boiling water

5 c. flour

5 tsp. baking soda

4 beaten eggs

1 qt. buttermilk

Mix bran, oatmeal, Grape Nuts; add sugar, salt and margarine. Pour boiling water over it, add flour to which soda has been added, also eggs and buttermilk. Stir well.

Fill muffin tin 2/3 full. Bake at 425 degrees for 20 minutes. Remainder of batter should be refrigerated in a tightly covered container. Do not stir batter when using at a later date.

This recipe may be divided into fourths and stored separately. Add dates and nuts to one; mixed dried fruit to one; cinnamon, raisin and nuts to one. Recipe will keep in refrigerator for 3 hours (covered).
