COFFEE CAKE #2

Filling and Topping:

1/2 cup brown sugar

2 tsp. cinnamon

2 tbsp. flour

3 tbsp. melted butter.

Mix all ingredients together and set aside.

Batter:

1-1/2 cups flour

3 tsp. baking powder 

1/4 tsp. salt 

1/2 cup milk

3/4 cup granulated sugar

1/2 shortening

1 egg

Sift dry ingredients together and cut in shortening into dry mixture. Beat egg and add milk. Add a little liquid at a time to dry ingredients. Butter a 6 x 10 baking pan and spread half of the batter over the bottom of the pan. Top with half of the filling. Then spread the rest
of the batter over the filling and sprinkle the rest of the filling over the top of batter. Bake in preheated oven 375 degrees for about 25 min.
