Oyster Sauce Beef and Chinese Peas

1-1/2 lbs. beef

1 tbsp. cornstarch

1 tbsp. sugar

1 tsp. shoyu

2 tsp. sherry

1/4 cup oyster sauce

2 tbsp. corn oil

1 clove garlic, minced

1/2 cup thinly sliced onion

1-1/2 cups Chinese peas, blanched

Cut meat in thin strips. Combine cornstarch, sugar, shoyu, sherry, oyster sauce, and 1 tbsp. of the oil. Mix with meat. Heat remaining tbsp. of oil in a saucepan and brown garlic. Add meat mixture and onion; stir-fry 1 minute. Add peas and cook 1 more minute. Makes 4-6 servings.

*To blanch: pour hot water over the peas in their pods. Drain before adding pods to the rest of the ingredients.
