Escabeche

 

3 medium-sized mullet or akule

Salt

Monosodium glutamate

1 round onion, sliced

1 stalk green onion

3 large tomatoes, sliced

3 tbsp. flour

1/4 cup water

Oil for frying

1 large ripe bell pepper, sliced

Clean fish and cut into three inch pieces. Heat oil in frying pan on medium heat. Salt fish and roll in flour. Fry fish until golden brown.

Remove excess oil from the frying pan leaving about 5 tbsp. of oil. Saute onions and tomatoes together. Add salt and MSG to taste. Cook well. Mix flour and water. Add mixture to thicken gravy. Add more salt if necessary. Add friend fish in gravy and simmer for 10 minutes. Stir and cover fish with gravy so that the taste would blend into the fish. Add chopped green onions. Serve it hot.
