Konbu Candy (Candied Seaweed)

 

Clean dashi konbu with damp cloth and cut in 1/4-inch strips. Fry crisp in deep fat.

Make a syrup of 1 cup sugar and 1/3 cup water. Cook until syrup spins a thread. Remove from stove and stir in the fried konbu.
