MINTED NUTS

1 8-ounce can nuts (walnuts or pecans)

1 cup water

2 tbsp. white corn syrup

12 marshmallows cut in small pieces

1/4 tsp. salt

2 cups sugar

2 or 3 drops peppermint flavoring (according to strength desired)

Mix sugar, water, syrup and salt. Stir until sugar is dissolved. Cook to soft ball stage. Remove from fire, add marshmallows, peppermint, and nuts. When the mixture begins to thicken, spread on a cookie sheet, then cut into small pieces before it hardens.

Peppermint flavoring varies in strength, so taste fondant to be sure you have the desired flavor.
