BAKED CHERRY PUDDING
Pudding:
2-1/2 cups sifted flour
3 tsp. baking powder
1 tsp. salt
1 cup sugar
4 tbsp. melted shortening
1 cup milk
3-1/2 cups cherries
Sauce:
4 cups cherry juice or water
1 cup sugar
4 tbsp. butter
Sauce Mixture:
Mix together 4 cups of cherry juice or water, 4 tbsp.butter and 1 cup sugar; bring to a boil.
Pudding Mixture:
Sift flour, measure and add baking powder, salt and sugar and sift together. Add milk and shortening. Stir only until smooth. Lightly grease the fry pan and spread the pudding mixture evenly on the bottom. Arrange the cherries on top and pour the sauce over entire mixture. Cover, leaving the vent open. Bake at 225 degrees for 25 minutes.
Serves 8.
