CARROT PUDDING
1/2 cup shortening
1-1/4 cups flour
1/3 cup brown sugar
1 tsp. baking powder
1 egg
1/2 tsp. salt
1 cup grated carrots
1/2 tsp. cinnamon
1/2 cup seedless raisins
1/2 tsp. nutmeg
1/2 cup currants
1/2 tsp. soda
1/2 tsp. thinly cut lemon peel
1 tbsp. water
Blend shortening and sugar, add egg. To this add carrots, raisins, currants, and lemon peel. Sift together all dry ingredients and add to shortening mixture mixing alternately with baking soda dissolved in water, Bake at 325 degrees for 1 hour.
