Papaya Pie With Cheese Crust

 

Crust:

2 cup flour

2/3 cup shortening

1 tsp. salt

1/2 cup grated cheese

4 to 6 T. cold water

Sift flour with salt. Cut in shortening until size of peas. Toss in cheese, lightly mix. Stir in water and mix until a ball is formed. Roll out for a two crust pie.

Filling:

2 cup diced ripe papaya

1 cup sugar

1 tsp. cinnamon

1/2 tsp. nutmeg

2 T. tapioca

2 T. butter

Mix ingredients in order given, except butter. Pour into bottom crust, dot butter over, lay top crust over and cut slits. Put in hot oven 450 F degrees for 10 minutes, reduce heat to 350 F and continue baking for another 30 minutes or until pie is well browned.
