Pineapple Jello Delight Cake

Pineapple Caramel Topping:

1 cup brown sugar

1/2 block butter

4 slices pineapple, well drained

1 small can crushed pineapple, drained

1/4 cup chopped nuts

Into a cake pan put brown sugar and butter, slowly caramelize over slow fire. Remove from stove and arrange slices of pineapple in butter-sugar mixture. Put crushed pineapple around the slices, patting firmly to set. Sprinkle chopped nuts over all. Pour cake batter.

Cake batter:

1 box orange-pineapple flavored gelatin

3/4 cup cold water

1 cup oil

4 eggs

1 box lemon velvet cake mix

Dissolve gelatin in water. Combine all ingredients in a large bowl and mix well. Pour over caramelized pineapple mixture and bake about 45 minutes at 350 F. Turn cake out as soon as it is out of the oven.
