Mom’s Fruit Muffins
While campaigning for office, my family and I had to prepare breakfast for my early morning sign holders. Although this recipe has always been a family favorite, it proved to be a “winner” with my workers who always came back for seconds.
Naturally, the recipe was obtained from and concocted by my mother.
RECIPE:
3 C. Bisquick
1-1/2 C. milk
3 large eggs
4 oz. (1 stick) margarine (or half margarine and half butter)
2 mashed bananas (or 1-1/2 C. canned peaches, drained, or 1-1/2 C. raisins)
Mix Bisquick alternatively with milk and eggs. Blend with melted margarine until fairly smooth. Do not overmix. Add fruits (either one of three or combination of two fruits). Spoon into muffin pans.
Bake in 350° oven for 20 minutes until fairly brown.
Serve warm with butter and jam or plain.
