Portuguese Goulash (Rancho a Portuguesa)

 

2 T. oil

1/2 lb. Portuguese sausage, cut into 1/2 slices

1 lb. lean stewing beef, cut into 1” cubes

2 cloves garlic, minced

1 large can tomatoes, chopped

1 tsp. pepper

1 large onion, chopped

1/2 tsp. salt

1 medium carrot, thinly sliced

water If needed

1 (16-oz.) can garbanzo beans, undrained

1 cup raw elbow macaroni

1/4 cup chopped parsley

Heat oil, add beef and brown lightly. Add tomatoes, onions, carrots, beans, sausage, garlic and seasonings. Simmer about 30 minutes over low heat or until meat is tender. Add water if needed to keep from sticking. Keeping heat at simmer, add macaroni and cook another 15 minutes, stirring a couple of times. Garnish with parsley and serve. Serves 4-6.
