Tofu Salad

 

2/3 c. green onion and Chinese parsley, chopped

1/2 c. shoyu

1/2 c. oil

1 clove garlic

1 block tofu

1 medium-sized tomato

1 flat can salmon

1 medium-sized Maui Onion, chopped

  1. Heat up 1/2 c. oil and 1 clove garlic. When garlic browns, add in shoyu, green onion and parsley mixture.

  2. Cut the tofu into 1/2-inch blocks and place on a platter.

  3. Cube the tomato and spread over the tofu.

  4. Spread the chopped onion over the tomato.

  5. Place the salmon over the onions.

  6. When ready to serve, pour the oil mixture over the dish.

NOTE: You may also add watercress and beansprouts.
