Spicy Lambshanks

 

4 lamb shanks

Salt, pepper, flour

1 cup water

1 cup cooked prunes, pitted

1 cup cooked dried apricots

1/2 cup sugar

1/2 tsp. cinnamon

1/2 tsp. allspice

1/4 tsp. cloves

1/4 tsp. salt

3 Tbsp. vinegar

Season the meat with salt and pepper. Dredge with flour and place in greased baking dish. Cover and bake at 350 F. until meat is tender (1-3/4 to 2 hours). Combine remaining ingredients, heat to boiling then simmer for 5 minutes. Drain most of the fat from the shanks, pour fruit mixture over all, cover dish and bake at 400 F. about 30 minutes. Serves 3 or 4 depending on size of shanks and appetites.
