Chicken Ruby

 

1 broiler cut in quarters

1/4 c. butter or margarine

1/4 tsp. ginger

3/4 c. orange juice

1 tsp. salt

1/2 medium onion, chopped

1 tsp. grated orange rind

1-1/2 c. fresh cranberries

3/4 c. sugar

1/2 c. chopped walnuts

Sprinkle chicken with salt. Brown in butter in skillet. Add onion, spices, orange rind and juice. Simmer covered for 20 minutes. Add cranberries and walnuts. Sprinkle with sugar. Simmer uncovered for 10 minutes longer. (This is also good without the cranberries.)
