Hot Cheese Potato Salad

 

4 cups cubed cooked potatoes

2 hard cooked eggs

1/2 cup sliced celery

1/3 cup minced onion

2 Tbsp minced green pepper

1/3 cup cider vinegar

1-1/2 tsp salt

1 tsp dry mustard

1/4 tsp pepper

2 slices bacon, diced

2 cups shredded sharp Cheddar cheese

Combine potatoes, chopped eggs, celery, onion and green pepper. Sprinkle with vinegar, salt, mustard and pepper. Saute bacon until crisp; pour hot drippings and bacon over potato mixture and toss lightly. Turn into shallow 2-quart casserole and sprinkle with cheese. Place under broiler and broil until cheese is bubbly.

Yield: 6 servings
