Butter Pretzels

 

1 cup butter

1 cup sugar

2 egg yolks, beaten

1 egg white, beaten stiff

1/2 tsp. lemon extract

2-1/4 to 2-1/2 cups sifted flour

Cream butter, add sugar gradually and mix well. Add egg yolks, stiffly beaten egg white and extract. Gradually add flour, blending in well. Put through a cooky press into ungreased cooky sheets. Bake at 400 F. for 10 to 12 minutes. Yields 5 doz.
