Korean Ginger Tea (Unusual)

 

1/3 cup sliced ginger root

5 cups water

2 dates

3 walnuts or almonds

1 tbsp. pine nuts

3/4 cup sugar

1/2 tsp. cinnamon

Wash and scrape and slice ginger in very thin slices. Add water and boil for 20 minutes. Remove ginger. Slice dates in thin slices. Shell and blanch nut meats and cut in small pieces. Remove brown covering from pine nuts. Add sugar and cinnamon to the water in which ginger was cooked. While still hot serve in cups adding a small amount of pine nuts, walnuts or almonds and dates to each cup.
