Jam Cake

 

1/2 cup shortening

1-1/3 cup brown sugar

2 eggs

2/3 cup jam

2/3 cup raisins

2-2/3 cup flour

1-1/2 tsp. salt

4 tsp. baking powder

1 tsp. cinnamon

1 tsp. nutmeg

1/2 cup nuts, chopped

2/3 cup milk

Blend shortening, sugar and eggs together. Add jam, nuts, and raisins. Sift together dry ingredients. Add alternately with milk. Pour into tube pan and bake in moderate oven 350 F for about 1 hour.

Cover with following icing:

1/3 cup water

2 egg whites

1/8 tsp. salt

1-1/4 cup sugar

1/2 cup currant jelly

Mix jelly, sugar and water. Cook slowly until syrup forms soft ball when tested in cold water. Pour slowly on stiffly beaten egg whites. Mix thoroughly and ice cake which has been cooled.
