Mom’s Best Fruit Cake

 

Pan Size: Foil lined loaf pans

Baking Time: 1 - 1-1/2 hours

Temperature: 275 degrees

Yields: 8 medium loaf pans

1 box (15 oz) raisins

5 c. water

4 c. sugar

2 c. Wesson oil

4 tsp. cinnamon

2 tsp. cloves

2 tsp. allspice

1 tsp. salt

9 c. flour

4 tsp. baking soda

2 containers fruit cake mix

2 c. nuts, chopped

  1. Soak the raisins in water for 5 minutes.

  2. Drain the water, then add 5 cups of water and boil for 10 minutes.

  3. Take off heat and add the sugar, oil, cinnamon, cloves, allspice and salt.

  4. Mix together and let cool for 10 minutes.

  5. Add the sifted flour and baking soda and beat well.

  6. Add the fruit cake mix and nuts and mix well.

  7. Pour into foil lined loaf pans.

  8. Bake for 1 - 1-1/2 hours at 275 degrees.
