“Lomi Salmon”

 

1 lb. salt salmon

5 large ripe tomatoes (may be peeled if desired)

1 medium onion, chopped fine

Green onion tops, thinly sliced

Soak salmon in cold water for 3 or more hours. Remove bones and skin. Cut in little cubes or shred. Cut tomatoes in little cubes. Combine all ingredients and chill. Just before serving add a few cubes or crushed ice. Enough for 6 servings.
