Plain Muffins #2

2 cups sifted flour

1/2 tsp. salt

1 tbsp. sugar                                             

4 tsp. baking powder

1 cup milk

1 egg

2 tbsp. melted shortening

Sift flour, salt, sugar, and baking powder. Combine remaining in­gredients and add to the dry ingredients. Stir just enough to dampen the flour. Pour into greased pans filling pans 2/3 full. Bake in hot oven (450 degrees) 20 to 25 minutes. Makes 12.

Variations:

Pineapple Muffins - Add 1/2 cup flour, 3 tbsp. sugar, 2 tbsp. shortening and one No. 1 can crushed pineapple. Mix and bake as above.

Cornmeal Muffins - Add 1 cup cornmeal and 1 cup flour instead of two full cups. The rest of the ingredients are same.

Jelly Corn Muffins - Use recipe above with Corn meal. Fill greased muf­fin pan 1/4 full, put a teaspoon of jelly on each, cover with more batter and bake in a hot oven 400 degrees.
