Three Layer Chocolate Mochi

 

2 cups Mochiko

2 cups Sugar

1 tablespoon Baking Soda

1/2 cup (1 stick) Butter or Margarine

1 cup Semi-sweet Chocolate Chips

2 cans (12 ounce) Evaporated Milk

2 teaspoons Vanilla Extract

2 Eggs, beaten

Sift together mochiko, sugar and baking soda. Melt butter and chocolate chips together. Combine with milk, vanilla and eggs. Mix well. Add dry ingredients and stir until it is a smooth batter. Pour into a greased 9 x 13 inch baking pan.

Bake in a preheated 350° oven for 45 to 55 minutes. Cool before serving. DO NOT REFRIGERATE.

The top Layer is crusty, the second Layer is mochi-like and the third Layer (bottom) has the texture of a cake. This is more chocolaty than ones made with cocoa powder.
