Pickled Maui Onions

 

1-1/2 pounds small Maui Onions

1/4 cup Ginger, minced

2 Hawaiian Chili Peppers, finely chopped or 1 teaspoon Red Pepper Flakes

1 cup Cide Vinegar

1/2 cup Water

1 tablespoon Sugar

2 teaspoons Hawaiian Salt

Peel onions. Cut in half or quarters. Place onions in a quart jar. Add ginger, red peppers, vinegar, water, sugar and salt. Cover jar and shake well. Refrigerate for 2 to 3 days, shaking the jar at least once a day.
