Onolicious Corn Relish

 

22 oz. can corn

1 c. onion, chopped

1 red bell pepper, chopped

1 Japanese cucumber, seeded and chopped

1 c. Thai sweet chili sauce

1/2 c. jicama (chop suey yam)

Juice of lime

Cilantro (optional)

Red chili peppers (optional)

Mix all ingredients together. Keep refrigerated. Serve with tortilla scoop chips.
