Hot Potato Salad

 

6-8 medium Irish potatoes

1/2 round onion, diced fine

3 stalks celery, diced fine

1 lb. imitation crab flakes

1-1/2 to 1-3/4 c. mayonnaise

salt and pepper to taste

seasoned bread crumbs (Progresso Italian style)

melted butter

  • Peel and slice potatoes diagonally; boil and drain well.

Microwave method: Add water just enough to cover sliced potatoes and a little Hawaiian salt. Microwave 10 minutes. (Mix after 5 minutes and continue cooking for 5 more minutes.)

  • Mix and pour into 9x13” pan or a large casserole dish. Sprinkle bread crumbs, drizzle with melted butter.

  • Bake at 350° for 20 minutes and broil for 5 minutes.

  • Can prepare night before. Bake and broil before potluck. Good for working mothers.
