Carrot Bread

1 cup sugar

1/2 tsp. cloves

1/2 cup salad oil

1/4 tsp. ginger

1-1/2 cups flour

1/4 tsp. salt

2 tsp. baking powder

1 cup grated carrots (1-1/2 large)

1/2 tsp. soda

2 eggs

1 tsp. cinnamon

1/2 cup chopped nuts

1 tsp. nutmeg

Mix sugar and oil. Blend. Add sifted dry ingredients. Add carrots. Beat well. Add eggs one at a time beating well after each addition. Add nuts and mix well. Bake in loaf pan. Bake at 350 degrees for 55 to 60 minutes.

Cover with aluminum foil for first 20 minutes of baking. This will prevent cracking or breaking on top.
