Spring Roll With Sauce
20 spring roll wrappers or lumpia wrappers
1/2 lb. chicken, deboned & finely chopped (shrimp or pork)
1/2 c. bamboo shoots, chopped fine
1/2 c. long rice, soaked in water & chopped fine
1 round onion, chopped fine
2 eggs, beaten
2 tbsp. fish sauce (Thai) or (1 tbsp. Patis plus 1 tbsp. water)
1/2 tbsp. soy sauce
Combine all ingredients and wrap in spring roll wrapper. Deep fry in oil until crisp and golden brown.
To serve, serve with fresh Manoa lettuce and mint leaves.
SAUCE:
1/2 c. sugar
1/2 c. water
1/4 c. vinegar
1/2 tsp. salt
1 garlic clove, crushed
2 tbsp. peanuts, ground
Pour sauce over lettuce wrapped around spring roll and mint leaves.
