BANANA PINWHEELS
2 cups flour
3 tablespoon softened butter or substitute
3 tsp. baking powder
1/2 tsp. salt
4 ripe bananas
6 tbsp. shortening
6 tbsp. brown sugar
2/3 cup milk
1 tsp. cinnamon
Sift together flour, baking powder and salt. Cut in shortening. Add milk and stir until soft dough is formed. Turn on to a floured board or pastry cloth and knead for 30 seconds. Roll into oblong shape 1/4 inch thick. Spread with part of the softened butter or substitute. Peel bananas and slice evenly over dough. Mix together sugar and cinnamon and sprinkle over bananas. Roll dough like a jelly roll; cut into slices 1-1/2 inches thick. Place into well oiled muffin pans, cut side up. Brush tops with remaining butter or substitute. Bake in a preheated oven at 425 degrees for 15 minutes. Yield: 12 pinwheels.
