SWEET BREAD (Pao Duce)

Yield: 5 large round loaves

1 cup milk (about) scalded

3 cups sugar

2 pkgs. or cakes yeast

3 tbsp. butter

1-1/4 cups lukewarm water

10 eggs, slightly beaten

14 cups flour

1/2 tsp. lemon extract

Z tsp. salt

Grated lemon rind (1 lemon)

1 egg (for brushing top)

Scald milk. Dissolve yeast in lukewarm water. Sift flour and measure. Sift flour, salt, and sugar. Add butter and stir. Add eggs, lemon rind, extract and yeast and mix well. Pound or knead dough for 20 minutes, gradually adding milk as needed (dampening hand with milk). Knead until no dough sticks to hands. Let rise in pan; until doubled in bulk. Pound down then shape into greased pans. Let rise until double in bulk. Brush top with whole egg, beaten well. Bake at 350 degrees for 1 hour for bread and 20 minutes for rolls.
