Apple Cake

 

2 eggs

1 tsp. vanilla

1 c. Wesson oil

2 c. sugar

4 c. coarsely chopped red apples (unpeeled)

MIX:

1 tsp. baking soda

2 tsp. cinnamon

2 c. flour

1 tsp. salt

1 c. chopped nuts

Beat eggs, oil, sugar and vanilla. Add apples and fold in dry ingredients. Add nuts. Pour into 9x13” greased and floured pan. Bake 1 hour at 350 degrees.
