BANANA BRAN MUFFINS

1 cup flour

1/2 teaspoon salt

1/2 teaspoon soda

1 teaspoon baking powder

2 tablespoons shortening

2 cups bananas, thinly sliced

1/4 cup sugar

1 egg

1 cup bran flakes or similar cereal

5 tablespoons milk

Mix and sift together the flour, salt, soda and baking powder. Blend shortening and sugar thoroughly. Add egg and beat well. Add bran flakes and milk. Mix and allow to stand while slicing the bananas. Add bananas and sifted dry ingredients, stirring as little as possible. Bake in well oiled muffin pans at 375 degrees for 30 minutes. Yield: 6 large or 12 small muffins.
