Cornmeal Cake

 

Combine dry ingredients:

1-1/2 c. Bisquick

3/4 c. sugar

1/2 tsp. baking powder

1 c. cornmeal

Combine wet ingredients:

1 c. milk or 1/3 c. powdered milk plus water to make 1 c. or 1/2 c. evaporated milk plus 1/2 c. water

1 c. or 2 blocks melted margarine or butter

2 beaten eggs

Combine wet and dry ingredients. Stir until mixed but still lumpy. Do not overmix. Pour into 2 small loaf pans or 1 large loaf pan, greased. Bake in 350 degree oven for about 30 minutes or until golden brown.
