Piccolo Pizzas

 

1/2 - 1 lb. good quality ground beef (not over 25% fat)

1/2 - 1 can tomato paste

1 - 2 cloves garlic, crushed

Refrigerated buttermilk biscuits (10 per pkg.) (number needed depends on amount of meat used)

Oregano, as desired (suggest 1/2 - 1 tsp.)

1 c. grated cheddar cheese

Stuffed olives, sliced

Cheese slices, cut in 8 triangles each

  1. Mix beef, tomato paste, garlic, oregano and grated cheese; blend thoroughly.

  2. Using a small pyrex custard cup, dipped lightly in flour, press each biscuit, leaving a rim on side.

  3. Spoon mixture onto biscuits.

  4. Garnish with 1/8 slices of cheese cut in triangles.

  5. Place a slice of stuffed olive on top.

Bake at 425 degrees for about 10 minutes. Use as pupus.
