Tofu Spread

 

1/2 firm tofu (20 oz.) drained

1 Tbsp. prepared mustard

2 Tbsp. mayonnaise

1/4 tsp. garlic powder

1 Tbsp. chopped green onions

Salt and white pepper to taste

Place tofu in a clean dishtowel and squeeze out water from the tofu. Crumble. Combine all ingredients and mix well. Keep refrigerated. Use within two days. This spread may be used as a sandwich filling, and as a spread on bagels, toast, crackers, etc.
