Connie Chun’s Famous Hunky Bunch Mango Bread

 

My recipe has been my favorite because it represents me, my development from a registered nurse to a lawyer.

If everything else failed, I baked Mango Bread, and it never failed. I could be a failure at any place else, but I am a complete success with my Mango Bread.

It reinforces my self esteem and tells me I am extra good or a success at something - baking Mango Bread.

2 c. flour

2 t. cinnamon

2 t. baking soda

1-1/2 c. sugar

1/2 t. salt

2 c. mango, diced

1 c. grated coconut

3/4 c. salad oil

3 eggs, lightly beaten

1/2 c. raisins

Mix flour, cinnamon, baking soda, sugar, and salt together. After mixing thoroughly, add remaining ingredients and stir well.

Lightly butter four loaf pans, 2-1/2 x 5 inches (or two larger loaf pans). Pour in batter until 2/3 full and bake for 55 minutes (or 65 minutes for larger pans) in 350° oven.

Cool and serve or wrap in foil and freeze. Makes 4 loaves.
