Codfish Pie

 

1 lb. shredded codfish

3/4 tsp. salt

5 cups mashed potatoes

1/2 tsp. pepper

5 eggs

1/2 tsp. garlic powder

3 T. butter or olive oil

Separate eggs. Beat yolks and mix with all the ingredients. Beat whites until stiff and fold into cod mixture. Pour into greased 2-quart casserole and bake covered at 325 F for about 40 minutes. Uncover and bake an additional 10 minutes to lightly brown the top. Serves 6.
