Tuna Pudding With Bacon (Pudim de Atum com Bacon)
1-3/4 cup rice
1 egg yolk, beaten
1 (6-oz.) can tuna
1/2 cup sliced green olives
6 slices bacon, diced
salt and pepper to taste
1 cup mayonnaise
bread crumbs
Tomato Sauce:
1 T. margarine
1 T. bread crumbs
1 medium onion, chopped
1/2 tsp. salt
1 (6-oz.) can tomato paste
1/2 tsp. pepper
1 cup water
Cook the rice in the usual fashion, adding 1/2 teaspoon salt to the water. Remove cooked rice, cool, then place in colander. Rinse to separate grains. Let drain very well. Drain tuna well and flake with a fork. Fry bacon and drain well. In a bowl mix all the ingredients. Place into buttered casserole, sprinkle with the bread crumbs, cover and bake at 350 F for 30 minutes. Prepare the sauce by melting the margarine in a pot, add onion and sauté lightly. Add tomato paste, water, bread crumbs and seasonings and simmer for 5 minutes. Unmold rice, pour sauce over and serve. Garnish with lettuce leaves. Serves 6.
