Portuguese Manicotti

 

5-1/2 oz. manicotti, cooked

1 can tomato sauce or 1/2 can tomato paste

1 lb. ground beet

2 large onions, finely chopped

1 tsp. salt

2 cloves garlic, minced

1/2 tsp. pepper

Fry meat until red is gone. Add onion, salt, pepper, garlic and tomato sauce or paste with 1/2 cup water. Simmer 10 minutes. Stuff manicotti. Grease a deep (4") loaf pan. Place half of the filled manicotti at the bottom. Pour over half of the white sauce, then the second layer of manicotti and the rest of the white sauce. Bake at 325 F about 45 minutes or until top is golden brown.

Medium White Sauce

6 T. butter or margarine

1-1/2 tsp. salt

6 T. flour

1/2 tsp. pepper

3 cups milk

Melt butter or margarine, blend in flour. Gradually add milk. Cook over low flame, stirring constantly until thick. Add seasonings.
