Souffle of Cod

 

4 cups mashed potatoes

2 eggs, separated

1 lb. cod, shredded

1 tsp. garlic powder

2 T. minced parsley

1 tsp. black pepper

Blend potatoes, cod, parsley, onions and seasonings. Whip whites and beat yolks. Mix whites with potato mixture. Put half in 13 x 9 inch pan. Baste with half of beaten yolks. Repeat layer. Bake in 350F oven for 25-30 minutes until browned on top. Serves 6.
