Swedish Meatballs

 

1-1/4 lbs. lean beef (ground twice)

1 Tbsp. finely grated onion (optional)

2 eggs

2 slices white bread

3/4 cup milk

1/8 tsp. allspice

1/8 tsp. nutmeg

1/8 tsp. pepper

1 tsp. salt

Soak bread in milk and mash. Add eggs, onion, spices, meat. Blend. Melt 2 teaspoons fat in heavy skillet. Brown meat which has been shaped into small balls. Remove to paper towel. Add 2 tablespoons flour to fat. Slowly add 1 cup water, stirring constantly. When this starts to thicken add 3/4 cup milk and salt and pepper to taste. Add meatballs. Cook slowly 20 minutes covered.
