Sweet and Sour Spareribs
3 lbs. chopped spareribs
Sweet and Sour Sauce:
1 can pineapple chunks
2 Tbsp. cornstarch
1/2 cup vinegar
1/2 cup brown sugar
2 Tbsp. soy sauce
2 Tbsp. lemon juice
Brown spareribs in large kettle or electric frying pan. Cover with water and simmer until tender, about 1/2 hour. Drain liquid and fat.
Add sweet-sour sauce, cover and simmer at least 1/2 hour more. Serve with rice.
Sweet and Sour Sauce:
Drain pineapple, measure syrup and add water if needed to make 1 cup. Blend juice and cornstarch until smooth. Stir in rest. Cook until thickened and clear. Add pineapple. Simmer 15 minutes.
